Ok, so there were a few problems with yesterday's concoction. First, it didn't fill me up. Second, I was hungry two hours later. Not cool. I revised the "recipe" today. I added three ounces of chicken. Yesterday's meats on the pizza were only a bit over an ounce.
I'm not sure that the string cheese adds any flavor. I only used 1/2 of a stick, but I still don't think it is necessary. Next time I'm going to take that out and instead use a tablespoon of tomato sauce and actually mix everything together and then put it on the tortilla. It won't look pretty, but it will be moist and the toppings won't fall off as easily. Or better yet, nix the tortilla and find another base of some sort. I saw a recipe that called for an egg white that was sort of scrambled, but that just sounds gross. Still, the tortilla adds 100 calories, as well as carbs, which I'm watching, too. Or maybe I don't even need a base? Just mix it all up and eat it out of a custard cup?
I've got a tenderloin in the slow cooker with a dry rub recipe from my friend. He swears by it. There's brown sugar in there, but I cut some of it out and tossed in some Stevia. We'll see how it turns out. 5 more hours to go. I'm not going to be able to eat much because breakfast and lunch today were both 250 calories. My current calorie goal is 800/day, but it may increase once I have some fluid in the band and eat more meat. Right now is the most dangerous time - I don't ever feel full, and don't want to gain and weight.
